Baharat Beef Stew
A Baharat-Spiced Stew is a hearty, comforting dish infused with the deep, warm flavours of the baharat spice mix. Baharat is a fragrant Middle Eastern seasoning blend made with spices like black pepper, coriander, cumin, cinnamon, cloves, and cardamom, and it adds complexity and richness to stews, whether made with meat or vegetables. Here are three versions of this dish: Baharat-Spiced Chicken Stew, Baharat-Spiced Beef Stew, and a Vegetarian Baharat-Spiced Stew with root vegetables.
Ingredients:
2 lbs (900g) beef stew meat (chuck or brisket), cut into cubes
2 tablespoons olive oil
1 large onion, diced
3 cloves garlic, minced
2 tablespoons Baity Baharat spice blend
2 medium carrots, sliced
2 medium potatoes, peeled and cubed
2 cups beef broth
1 can (14 oz) diced tomatoes
1 tablespoon tomato paste
Salt and freshly ground black pepper, to taste
Fresh parsley or cilantro, chopped (for garnish)
Instructions:
Brown the Beef:
Heat the olive oil in a large pot or Dutch oven over medium-high heat. Season the beef cubes with salt and pepper. Brown the beef in batches, turning to ensure all sides are seared. This will take about 5-7 minutes per batch. Once browned, remove the beef from the pot and set aside.
Sauté the Aromatics:
In the same pot, add the diced onion and cook for about 3 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.
Add the Spices:
Stir in the baharat and let the spices toast for about 1 minute.
Add Vegetables and Liquid:
Add the carrots, potatoes, and the browned beef back into the pot. Pour in the beef broth, diced tomatoes and tomato paste. Stir to combine.
Simmer the Stew:
Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.
Finish and Serve:
Adjust the seasoning with salt and pepper. Serve the stew in bowls, garnished with freshly chopped parsley.
