Fattoush Salad with Sumac Dressing
Ingredients:
For the Salad:
2 cups Romaine lettuce, chopped
1 cucumber, diced
2 tomatoes, diced
1/4 red onion, thinly sliced
1/4 cup fresh parsley, chopped
1/4 cup fresh mint leaves, chopped
2 radishes, thinly sliced (optional, for extra crunch and flavour)
2 medium-sized pita bread (or flatbread)
1 tablespoon olive oil (for brushing the pita)
For the Sumac Dressing:
3 tablespoons olive oil
2 tablespoons fresh lemon juice (or more, to taste)
1 tablespoon apple cider vinegar
1 tablespoon ground sumac (adjust to taste)
1 teaspoon honey or maple syrup (optional, to balance acidity)
1/2 teaspoon ground cumin (optional, for warmth)
Salt and freshly ground black pepper, to taste
Instructions:
Prepare the Pita:
Preheat your oven to 375°F (190°C).
Brush the pita bread with olive oil on both sides and cut it into wedges.
Arrange the pita wedges on a baking sheet and bake for about 7-10 minutes, or until golden and crispy. You can also toast the pita in a skillet if you prefer.
Once the pita is crispy, set it aside to cool.
Prepare the Vegetables:
While the pita is baking, chop the lettuce, cucumber, tomatoes, and radishes (if using). Slice the red onion thinly and chop the fresh parsley and mint.
Make the Sumac Dressing:
In a small bowl, whisk together olive oil, lemon juice, vinegar, sumac, honey (if using), and cumin (if using). Season with salt and pepper to taste.
Taste the dressing and adjust the acidity or sweetness with extra lemon juice or honey as desired. The sumac should give the dressing a tangy, citrusy flavour that balances the richness of the olive oil.
Assemble the Salad:
In a large bowl, combine all the vegetables (lettuce, cucumber, tomatoes, red onion, parsley, mint, and radishes) and toss them gently.
Tear the crispy pita bread into large pieces and add them to the salad, tossing again to incorporate.
Dress the Salad:
Pour the sumac dressing over the salad just before serving, and toss everything together until well coated. You want the pita to absorb some of the dressing but still stay a bit crispy.
Serve:
Serve immediately, garnished with extra sumac or fresh herbs if desired. You can also drizzle a little more olive oil on top for richness.

Fattoush salad is perfect on its own as a light meal, but it also pairs beautifully with grilled meats, like shawarma, kebabs, or grilled vegetables.
