Here's a simple and delicious recipe for Soft-Boiled Eggs with Sumac and Dill. This dish is quick to prepare and packs a punch of flavour!

Soft-Boiled Eggs with Olive Oil, Salt, Pepper, Sumac, and Dill

Ingredients:

  • 4 large eggs

  • 2 tablespoons extra virgin olive oil (plus extra for drizzling)

  • 1 teaspoon ground sumac

  • Salt, to taste

  • Freshly ground black pepper, to taste

  • Fresh dill, chopped (about 1 teaspoons)

Instructions:

  1. Boil the Eggs:

    • Bring a pot of water to a boil, enough to cover the eggs by an inch or two. Once the water is boiling, carefully add the eggs.

    • Reduce the heat to a gentle simmer and cook the eggs for 6-7 minutes for soft-boiled eggs with runny yolks. If you prefer a slightly firmer yolk, cook for 8 minutes.

    • When done, transfer the eggs to a bowl of ice water or run them under cold water to stop the cooking process. Peel the eggs once they’re cool enough to handle.

  2. Prepare the Topping:

    • In a small bowl, combine the olive oil, ground sumac, and a pinch of salt and pepper. Mix well. The olive oil and sumac will provide a tangy, rich flavour that complements the eggs beautifully.

  3. Assemble the Dish:

    • Place the peeled soft-boiled eggs on a plate or shallow bowl. Slice them in half lengthwise if you prefer.

    • Drizzle the olive oil and sumac mixture generously over the eggs.

    • Sprinkle with fresh chopped dill for a burst of herbal freshness.

    • Add a little more salt and pepper, to taste, if desired.

  4. Serve:

    • Serve immediately as a delicious breakfast, snack, or as part of a light meal. These eggs pair well with warm crusty bread or pita to dip into the runny yolks.

Serving Suggestions:

  • For a more substantial dish, serve with warm pita bread, avocado slices, or sautéed greens like spinach or arugula.

Enjoy your soft-boiled eggs with olive oil, sumac, and dill—a simple yet elevated treat that combines creamy, rich flavours with a tangy kick!
