Sunny Side Up Eggs with Zatar

This dish is a delightful way to elevate your breakfast or brunch with the warm, earthy flavors of zatar. The crispiness of the sunny side up eggs pairs perfectly with the herbaceous and tangy za'atar, making for a satisfying and easy-to-make meal - you’ll never eat your eggs any other way again!

Ingredients:

  • 2 large eggs (or more, depending on servings)

  • 1 tablespoon olive oil or butter

  • 1-2 teaspoons Baity Palestinian Zatar

  • Salt and freshly ground black pepper, to taste

  • Fresh herbs for garnish (dill is our herb of choice)

  • Toast or pita bread (optional, for serving)

Instructions:

  1. Prepare the Pan
    Heat a non-stick frying pan over medium-low heat. Add the olive oil or butter and let it melt, making sure the pan is evenly coated.

  2. Crack the Eggs
    Crack the eggs into the skillet gently, keeping the yolks intact. You can do this directly into the pan or crack the eggs into a small bowl first and then slide them in.
    Let the eggs cook undisturbed for about 2-3 minutes, or until the whites are set but the yolks remain runny. For crispy edges, you can increase the heat slightly at this point.

  3. Season the Eggs
    As the eggs cook, sprinkle a generous pinch of za'atar over the top. The za'atar will toast slightly in the hot oil and infuse the eggs with its aromatic flavors. Add a pinch of salt and freshly ground black pepper to taste.

  4. Garnish and Serve
    Carefully transfer the eggs to a plate. Garnish with a little extra zatar and fresh herbs, such as parsley or dill, for added colour and flavour.

  5. Enjoy!
    Serve your sunny side up eggs on a toasted slice of sourdough bread, or a side of fresh salad or labneh.

Breakfast will never taste the same again!

Tips:

  • For extra richness, you can fry the eggs in ghee (clarified butter) for a slightly nutty flavor that complements the za'atar.

  • If you prefer your yolks a little less runny, you can cover the pan for the last 1-2 minutes of cooking to help cook the top of the whites without overcooking the yolk.

  • Add dollop of labneh (strained yogurt) to your toasted sourdough for extra creaminess.
