Vegan Mushroom Shawarma
Mushroom shawarma is a delicious vegan twist on the classic meat-based shawarma. The mushrooms absorb all the rich, aromatic spices, making them juicy and flavorful, while still having that signature shawarma taste. Here’s a recipe for a Mushroom Shawarma using a blend of spices, perfect for wrapping in pita or flatbread and topped with fresh veggies and sauces.
Ingredients:
For the Mushrooms:
2 teaspoons Baity Shawarma Spice Blend
4 cups of your preferred mushrooms (cleaned and sliced)
2 tbsp olive oil
2 tbsp Tahini
3 tbsp lemon juice (freshly squeezed)
2 garlic cloves (minced)
1 tbsp shawarma spice mix (from above)
1 tbsp tahini (optional, for added richness)
Salt to taste
For the Garnishes and Serving:
Pita or flatbread
Sliced tomatoes
Sliced cucumbers
Sliced red onions
Fresh parsley (chopped)
Instructions:
1. Marinate the Mushrooms:
In a large bowl, combine the sliced mushrooms, olive oil, yogurt, 1 tbsp lemon juice, garlic and shawarma spice mix.
Toss well to coat all the mushrooms in the marinade. Let it sit for 20-30 minutes (or up to 1 hour) to allow the mushrooms to absorb the flavour of the spices. Mushrooms don’t need as long to marinate as meat, so even a short marinating time will be effective.
2. Cook the Mushrooms:
Heat a large skillet or frying pan over medium-high heat. Once hot, add the marinated mushrooms to the pan.
Cook for about 7-10 minutes, stirring occasionally, until the mushrooms are golden brown, tender, and have released their moisture. If you want a slightly crispy texture, let the mushrooms sit undisturbed for a couple of minutes before stirring.
Taste and adjust the seasoning with salt or additional shawarma spice mix if needed.
3. Make the Tahini Sauce:
Mix the tahini, remaining lemon juice until emuslified
Slowly add water, mixing vigorously until the mixture starts to thin into a sauce consistency
Add salt and a touch of minced garlic and mix until combined.
4. Assemble the Shawarma:
Warm your pita or flatbread in a dry pan for about 30 seconds on each side.
Place the cooked mushrooms in the centre of the flatbread.
Add your favourite toppings: sliced tomatoes, cucumbers, red onions, and a sprinkle of fresh parsley.
Drizzle with tahini sauce
5. Serve and Enjoy:
Roll or fold the pita around the mushroom filling to create a wrap, or serve it open-faced as a sandwich. Enjoy your vegetarian mushroom shawarma with all its vibrant, spiced flavour!
Tips:
Make It Spicy: Adjust the cayenne pepper or add a chopped chili to the marinade if you like a little extra heat.
