Baharat Spiced Stew with Root Vegetables

A Baharat-Spiced Stew is a hearty, comforting dish infused with the deep, warm flavours of the baharat spice mix. Baharat is a fragrant Middle Eastern spice blend made with spices like black pepper, coriander, cumin, cinnamon, cloves, and cardamom, and it adds complexity and richness to stews, whether made with meat or vegetables.

Ingredients:

  • 1 tablespoon olive oil

  • 1 large onion, diced

  • 3 cloves garlic, minced

  • 2 tablespoons baharat seasoning

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1/2 teaspoon ground turmeric (optional)

  • 2 medium carrots, peeled and sliced

  • 2 medium potatoes, peeled and cubed

  • 2 parsnips, peeled and sliced

  • 1 sweet potato, peeled and cubed

  • 1 can (14 oz) chickpeas, drained and rinsed

  • 1 can (14 oz) diced tomatoes

  • 4 cups vegetable broth

  • 1 tablespoon tomato paste

  • 1 teaspoon fresh lemon juice (optional)

  • Salt and freshly ground black pepper, to taste

  • Fresh parsley or coriander, chopped (for garnish)

Instructions:

  1. Sauté the Aromatics:

    • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook for about 3-4 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.

  2. Add the Spices:

    • Stir in the baharat, ground cumin, ground coriander, and ground turmeric (if using). Let the spices cook for 1 minute.

  3. Add Vegetables and Liquid:

    • Add the carrots, potatoes, parsnips, sweet potato, chickpeas, and diced tomatoes (with juices) to the pot. Stir to combine.

    • Pour in the vegetable broth and stir in the tomato paste.

  4. Simmer the Stew:

    • Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 35-40 minutes, or until the vegetables are tender.

  5. Finish and Serve:

    • Stir in the fresh lemon juice (optional) and adjust the seasoning with salt and pepper.

    • Serve the stew in bowls, garnished with fresh parsley or cilantro.

    • Serve with toasted bread or a rice
