Zatar Sweet Potato Wedges
with Harissa Mayo Dip

Zatar Sweet Potato Wedges are roasted to perfection with the earthy, tangy flavour of zatar, bringing a Middle Eastern twist to your usual sweet potato wedges. Paired with a creamy Harissa Mayo Dip, which adds a spicy, smoky kick, this dish is a flavour-packed treat!

Ingredients:

For the Sweet Potato Wedges:

  • 3 medium sweet potatoes, peeled and cut into wedges

  • 2 tablespoons olive oil

  • 2 tablespoons Baity Palestinian zatar

  • 1 teaspoon ground cumin

  • 1 teaspoon smoked paprika (optional for a smoky flavour)

  • Salt and freshly ground black pepper, to taste

  • 1 tablespoon fresh lemon juice (optional, for a little tang)

  • Fresh parsley for garnish (optional)

For the Harissa Mayo Dip:

  • 1/2 cup mayonnaise (use vegan mayo for a dairy-free option)

  • 1-2 tablespoons harissa paste (adjust to your spice preference)

  • 1 tablespoon lemon juice

  • 1 teaspoon garlic powder

  • Salt and freshly ground black pepper, to taste

  • Water, to thin (optional)

Instructions:

1. Prepare the Sweet Potato Wedges

  • Preheat your oven to 200°C (400°F).

  • Peel the sweet potatoes and cut them into wedges. Try to make them as even in size as possible to ensure they cook evenly.

  • Place the wedges in a large bowl and drizzle with olive oil. Toss to coat evenly.

  • Sprinkle the zatar, ground cumin, smoked paprika (if using), salt, and black pepper over the wedges. Toss again to coat them in the spices.

2. Roast the Sweet Potato Wedges

  • Line a baking sheet with parchment paper and spread the sweet potato wedges out in a single layer. Ensure that they aren’t overcrowded so they can crisp up.

  • Roast the wedges in the preheated oven for 25-30 minutes, flipping them halfway through, until they are golden and crispy on the outside and tender on the inside.

  • Once roasted, remove the wedges from the oven and squeeze a little fresh lemon juice over them for added brightness (optional). Garnish with fresh chopped parsley or cilantro if desired.

3. Make the Harissa Mayo Dip

  • While the wedges are roasting, prepare the dip by combining mayonnaise, harissa paste, lemon juice, garlic powder, salt, and black pepper in a small bowl.

  • Stir well to combine. If the dip is too thick, add a little water, a teaspoon at a time, to thin it to your desired consistency.

  • Taste and adjust the seasoning, adding more harissa for spice or more lemon juice for tang if needed.

4. Serve

  • Once the sweet potato wedges are done, remove them from the oven and serve with the harissa mayo dip on the side.

  • Enjoy your zatar-infused sweet potato wedges with a kick of spicy, creamy dip!

Tips:

  • Customize the Dip: Feel free to add a little more garlic, lemon, or even a pinch of smoked paprika to the harissa mayo dip for extra flavour.

  • Baking Tip: To make the wedges extra crispy, after tossing them in oil and seasoning, let them sit on the baking sheet for a few minutes before roasting. This will help them crisp up more effectively.

These Zatar Sweet Potato Wedges with Harissa Mayo Dip are a perfect blend of spice, sweetness, and creaminess. The zatar brings a deep, aromatic flavour to the wedges, while the harissa mayo adds a smoky heat that perfectly complements the dish. Perfect as a side, snack, or appetizer for your next meal! Enjoy!
