Zeit + Zatar
‘Zeit’ is the colloquial term for extra virgin olive oil in the Arabic speaking world.
This Zatar and Olive Oil dip is a traditional, flavourful treat enjoyed throughout the Middle East. The earthiness of the zatar combines perfectly with the richness of the olive oil, and the warm, crispy pitta bread is the ideal vessel for dipping.
Ingredients:
For the Zatar and Olive Oil Dip:
3 tablespoons Baity Palestinian zatar
6 tablespoons extra virgin olive oil (good-quality oil is key)
For the Toasted Pitta Bread:
4 pitta breads, toasted
Instructions:
1. Prepare the Zatar and Olive Oil Dip
In a small bowl, combine the zatar and olive oil. Stir until well combined.
2. Toast the Pitta Bread
Pop the pitta bread in a toaster until toasted to your desired level.
3. Serve
Serve the Zatar and Olive Oil Dip in a shallow dish with the warm, toasted pitta bread on the side.
Tear a piece of pitta bread and enjoy by dipping the pitta bread into the zatar and olive oil mixture.
